Ingredients
- 2-pound side of salmon
- 1-pound green beans
- 1 tablespoon Sesame Oil
- 3 tablespoons Creamy Peanut Butter
- 2 tablespoons peanut oil or Sesame Oil
- 1 teaspoon minced garlic or 1 cube Frozen Garlic
- 1 teaspoon fresh or 1 cube frozen crushed ginger
- 2 tablespoons low sodium soy sauce
- 1 tablespoon Lime Juice
- 1 tablespoon rice vinegar
For Topping
- scallions, sliced
- roasted peanuts, chopped
Directions
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Parchment Paper.
- Place the salmon in the middle and surround with green beans. Drizzle about one tablespoon of sesame oil on the green beans.
- Mix together the peanut butter, peanut oil, garlic, ginger, soy sauce, lime juice, and rice vinegar until smooth. Spread over the salmon and drizzle over the green beans. Mix the green beans around so they are coated in the sauce.
- Place in oven at 400 degrees Fahrenheit for 20 minutes or until cooked to 145-degree Fahrenheit internal temp.
- Remove from oven. Sprinkle the salmon with sliced scallion and the whole pan with chopped peanuts. Serve alone or over rice.
